Lentil and Curried Sweet Potato Tacos with Cilantro Lime Sauce

Last night I made Lentil and Curried Sweet Potato Tacos with Cilantro Lime Sauce. I loosely followed the recipe from "Veggies Don't Bite" and loved the outcome! My boyfriend (who is not becoming vegetarian) really enjoyed this meal too!

Lentil and Curried Sweet Potato Tacos with Cilantro Lime Sauce

Ingredients:

Filling:

2 cups Red Lentils (cooked)

2 cups Butternut Squash

Cumin

Paprika

Cilantro Lime Sauce:

1 cup greek yogurt

1 cup shopped cilantro

1 tablespoon red or white wine vinegar

2 roasted cloves of Garlic

1 Lime, juiced

Toppings of your choice (I used avocado and green onions)

On a flour tortilla wrap (but you could use lettuce, corn tortilla, collard greens, whataver!)

Cube and sprinkle the butternut squash with cumin and paprika, then bake in a baking dish on 400 F for approx. 20-30mins.

Meanwhile, mix cilantro, greek yogurt, vinegar, garlic and lime together. (Blend if desired, I didn't)

Once the butternut squash is baked add more cumin and paprika and mix with lentils.

Put butternut squash mix and cilantro sauce mix on tortilla and top with other veggies!
