West African Peanut Soup

I have not posted anything in quite a while!

So here is my next recipe. This was inspired by a soup I tried at Pete's Frootique and literally fell in love with!

I searched the internet for any West African Peanut Soup I could find and finally decidec on the Mind Body Green soup!

but I added extra peanut butter and extra sweet potato and made a few small changes.

West African Peanut Soup

Ingredients

  • 1 tablespoon avocado oil

  • 2 cups chopped onions

  • 1 cup diced celery

  • dash of sea salt

  • 2 tablespoons fresh ginger (peeled and chopped)

  • Sriracha or other hot sauce (I just squeezed a bunch in)

  • 4 cups peeled chopped sweet potatoes

  • 1 cup Vegetable broth

  • 2 cups water

  • 2 cups tomato juice (I used homemade)

  • 1.5 cup natural smooth peanut butter

  • 1⁄4 cup chopped fresh cilantro chopped scallions or chives (for topping)

  • Warm the oil in a covered soup pot on medium heat.

  • Add the onions, celery, and salt and cook, stirring frequently, until softened, 10 to 15 minutes.

  • Stir in the ginger and hot sauce.

  • Add the sweet potatoes and water and stir well. Bring to a boil, cover, and simmer until the vegetables are very tender, about 20 minutes. Add the tomato juice and peanut butter to the pot. In a blender in batches, or using an immersion blender, purée the soup until smooth.

top with whatever you like and enjoy!
