West African Peanut Soup

I have not posted anything in quite a while!
So here is my next recipe. This was inspired by a soup I tried at Pete's Frootique and literally fell in love with!
I searched the internet for any West African Peanut Soup I could find and finally decidec on the Mind Body Green soup!

but I added extra peanut butter and extra sweet potato and made a few small changes.
West African Peanut Soup
Ingredients
1 tablespoon avocado oil
2 cups chopped onions
1 cup diced celery
dash of sea salt
2 tablespoons fresh ginger (peeled and chopped)
Sriracha or other hot sauce (I just squeezed a bunch in)
4 cups peeled chopped sweet potatoes
1 cup Vegetable broth
2 cups water
2 cups tomato juice (I used homemade)
1.5 cup natural smooth peanut butter
1⁄4 cup chopped fresh cilantro chopped scallions or chives (for topping)
Warm the oil in a covered soup pot on medium heat.
Add the onions, celery, and salt and cook, stirring frequently, until softened, 10 to 15 minutes.
Stir in the ginger and hot sauce.
Add the sweet potatoes and water and stir well. Bring to a boil, cover, and simmer until the vegetables are very tender, about 20 minutes. Add the tomato juice and peanut butter to the pot. In a blender in batches, or using an immersion blender, purée the soup until smooth.
top with whatever you like and enjoy!
